Trip Overview

Join us for a thoughtfully curated journey through the Baltic states—Lithuania, Latvia, and Estonia—where history, culture, and food come together in a truly special way. This experience blends guided exploration with meaningful, hands-on moments: cooking alongside local chefs, visiting farms and markets, and sharing meals that tell the story of each region.

From the baroque charm of Vilnius to the Art Nouveau elegance of Riga and the medieval beauty of Tallinn, each stop offers its own distinct character. Along the way, we’ll venture into the countryside, connect with local makers and producers, and enjoy a balance of planned experiences and free time to relax or explore on your own. This is a trip designed not just to see the Baltics, but to experience them—through their people, traditions, and flavors.

Day 1 – Arrival in Vilnius (May 5, 2027)

Welcome to Lithuania! Upon arrival in Vilnius, you’ll be transferred to a centrally located 4- or 5-star hotel where you can settle in and ease into the rhythm of the trip. Vilnius is compact, welcoming, and full of character—an ideal place to begin our Baltic journey together.

In the early evening, we’ll head out for a relaxed walking orientation through the Old Town, where you’ll get your first glimpse of its baroque architecture, hidden courtyards, and lively streets. We’ll then gather for a warm welcome dinner at Ertlio Namas, known for its thoughtful, modern interpretation of historic Lithuanian recipes—a perfect introduction to the flavors and spirit of the region.

Day 2 – Trakai & Lithuanian Culinary Traditions (May 6, 2027)

Today we venture just outside Vilnius to the storybook town of Trakai, set among shimmering lakes and home to the iconic island castle. This area is also home to the Karaim community, whose centuries-old traditions bring a unique cultural layer to Lithuania’s history. We’ll explore their heritage through food, one of the most meaningful ways to experience a place.

Later, we’ll visit a charming rowan wine farm, where we’ll enjoy a tasting paired with a relaxed countryside lunch. Back in Vilnius, the day continues with a hands-on cooking class led by beloved chef Beata Nicholson—equal parts fun, social, and delicious. Expect to leave with new skills, great memories, and a deeper appreciation for Lithuanian cuisine.

Day 3 – Farm-to-Table Lithuania (May 7, 2027)

This morning, we head into the countryside to visit the Farmers Circle, a collective that highlights sustainable farming and a true connection to the land. It’s a chance to slow down, meet local producers, and see where many of the region’s best ingredients begin.

Lunch is a highlight today at Red Brick, a Michelin Green Star restaurant known for its creative, seasonal approach and commitment to sustainability. After some free time back in Vilnius to relax or explore at your own pace, we’ll regroup in the evening at Senūtoríų Pasažas, a lively and thoughtfully curated food courtyard. Dinner at Nineteen18 offers a refined yet approachable dining experience to close out the day.

Day 4 – From Vilnius to Riga (May 8, 2027)

This morning we make our way to Latvia, starting with a short flight to Riga. Once there, we’ll dive right in with a guided city tour to get our bearings and discover the charm of this vibrant capital, known for its Art Nouveau architecture and lively atmosphere.

We’ll enjoy lunch together followed by a tasting of Riga Black Balsam, a traditional herbal liqueur with a long history. After checking into our hotel, we’ll visit Āgenskalns Market alongside a local chef—an engaging way to experience everyday Latvian food culture. Dinner this evening is at a local restaurant, where we can unwind and enjoy our first evening in Riga.

Day 5 – Sigulda & Medieval Latvia (May 9, 2027)

Today we head out into the Latvian countryside to explore Sigulda, often called the “Switzerland of Latvia” for its rolling landscapes and scenic beauty. We’ll visit Turaida Castle, perched above the Gauja River, and step into the region’s medieval past.

One of today’s most memorable experiences is a traditional bread-baking workshop—simple, hands-on, and deeply rooted in Latvian culture. After enjoying lunch at a cozy local tavern, we’ll continue to the charming town of Cēsis before making our way back to Riga in the late afternoon.

Day 6 – Western Latvia: Sabile & Kuldīga (May 10, 2027)

We venture west today to explore the quieter, storybook side of Latvia. Our stops include Sabile and Kuldīga, two towns full of character, history, and picture-perfect streets. Kuldīga, in particular, is known for its laid-back charm and Europe’s widest waterfall—a unique and unexpected highlight.

We’ll pause for a relaxed lunch at a local restaurant and take time to enjoy the slower pace of the region before heading back to Riga. In the evening, we’ll gather for dinner in the Old Town, soaking in the energy and atmosphere of the city one last time.

Day 7 – Into Estonia via a Cidery Experience (May 11, 2027)

Today we say goodbye to Latvia and make our way toward Estonia, with a memorable stop along the way at Jaanihanso, an award-winning cidery. Here, traditional methods meet modern craftsmanship, and we’ll enjoy a tasting paired with a relaxed, convivial dinner.

Afterward, we continue on to Tallinn, Estonia’s capital, where we’ll check into our hotel and settle in for the next chapter of the journey.

Day 8 – Discovering Tallinn (May 12, 2027)

Tallinn offers a wonderful blend of medieval history and creative modern energy. We start with a panoramic tour of the city, including a visit to the Viimsi Open Air Museum for a hands-on fish workshop that gives insight into Estonia’s coastal traditions.

Back in the city, we’ll enjoy a local craft beer tasting before heading into the Old Town for a relaxed walk through its winding streets. Along the way, we’ll try our hand at marzipan painting and stop into the historic Town Hall Pharmacy—one of Europe’s oldest operating pharmacies. Dinner tonight at Restaurant N14 rounds out a full and varied day.

Day 9 – Nature & Culinary Creativity in Estonia (May 13, 2027)

Our final full day is all about creativity, nature, and sharing great food together. We’ll begin with a fun and interactive chocolate-making workshop before heading out of the city to Ööbiku Gastronomy Farm.

Before cooking, we’ll take a peaceful walk through a nearby bog—a uniquely Estonian landscape that feels quiet, open, and grounding. At the farm, we’ll cook alongside Chef Ants Uustalu, creating a meal that reflects both the region and the group’s shared experience.

Back in Tallinn, we’ll close the journey with our farewell dinner at Fotografiska, a zero-waste restaurant known for its forward-thinking approach and outstanding cuisine.  The evening will be celebrated and capture the essence of all that we have learned throughout our journey!

Day 10 – Departures (May 14, 2027)

After a memorable journey together through the Baltics, it’s time to head home. Enjoy a relaxed morning depending on your departure time before heading to the airport for your onward travels.

As we part ways, we take with us not just photos and souvenirs, but shared experiences—meals enjoyed together, new flavors discovered, and connections made along the way. We hope you leave feeling inspired, well-fed, and already dreaming about where we might travel next together.

  • The reservation fee is nonrefundable after 6 days from receipt and will be applied to the cost of the trip
  • Cancellations received on or before Friday, November 6, 2026 will get a refund of 50% of investment paid (less the $1000 per person reservation fee and credit card fees);
  • Cancellations received on or before Friday, March 5, 2027, will receive a refund of 25% of the deposits paid (less the $1000 per person reservation fee and credit card fees).
  • No cancellation refunds after Friday, March 5, 2027 unless there is a waiting list for this Journey and your place can be re-sold. Substitutions will be accepted at no additional charge.

Please arrive in Vilnius, Lithuania no later than 3pm Wednesday, May 5, 2027.  We will be ending our journey in Tallinn, Estonia on Friday, May 14, 2027.

*At least one traveler in your room will be required to download WhatsApp (a free app that allows for free messaging anywhere in the world) to keep our CLJ travelers informed of any updates to the daily itinerary.

Itinerary is accurate at the time of this printing, but the producer reserves the right to make any changes they feel will enhance the trip or make it more enjoyable for all involved.

CLJ Code of Conduct - Behavior Guidelines and Policies

The behavior and conduct of our CLJ travelers affects GROW's overall image and success of the Culinary Learning Journeys. To ensure that all CLJ travelers have the “best experience ever” on a learning journey, please be aware and abide by the following code of conduct.

All travelers shall:

Be mindful of local laws and respect the customs and culture of the trip location

Be aware that illegal activities will not be tolerated. The laws abroad may be different from the laws in the US and must be followed. You will be subject to any legal consequences and immediate dismissal from the tour. No refunds will be applicable.

Not consume excessive alcohol resulting in public intoxication or lewd behavior.

Respect your fellow travelers by behaving responsibly. Do not exhibit disruptive or offensive behaviors including: abusive or degrading language, physically threatening actions, hurtful criticism, inappropriate touching or using sexually explicit language.

X marks the spot. Be where you need to be when you need to be there. Scheduled activities are not mandatory but if you deviate from the planned program, you are responsible for any additional costs. No refunds from any scheduled programing will be given.

• Be mindful of your safety and belongings at all times, so that you can avoid any mishaps while traveling.

Foreign Travel and Local Laws

Participants agree to abide by all local laws while on tour and abroad, including those concerning drugs, alcohol and tobacco. If participants abuse or disobey local law they may be sent home at their own expense and waive the right to a refund for any of their tour fee. Participants should also be advised that if local authorities become involved, they would be subject to the laws and consequences of the country in which they are traveling.

In addition to the points above, you will find your trip more enjoyable if you spend some pre-travel time to educate yourself about the culture you’re visiting. Before you jet off across the world, do a little research. How do they dress? What do they eat? How do they say “hello” and “please & thank you”? This will help you adjust to the new environment and keep you from looking like a tourist.

The producer has the right to limit additional services or requests by the attendee of the CLJ guide that may interfere with the group's overall experience. Any additional needs will incur extra charges and must be pre-approved by the producer. Attendees are responsible for their personal well-being and should not expect undue attention or resources to be used to accommodate these needs. This includes but is not limited to medical needs, night outings, outside scheduled experiences, and sights, returns to the hotel at unscheduled times, unapproved shopping, specialty beverage procurement, luggage handling and services, souvenir procurement, etc.

Billing may take place at the time of approval as well as post-journey upon returning home.

In exchange for participation in the activities of a CULINARY LEARNING JOURNEY (CLJ) organized by the GROW FOUNDATION (GROW) and use of the property, facilities and services of GROW, I

agree for myself and (if applicable) for members of my family and/or traveling party, to the following:

1. AGREEMENT TO FOLLOW DIRECTION. I agree to observe and obey all posted rules and warnings, and further agree to follow any oral instructions or directions given by GROW, or the employees, representatives, or agents of the GROW.

2. ASSUMPTION OF THE RISKS AND RELEASE. I recognize that there are certain risks associated with travel and I assume the full responsibility for personal injury to myself and (if applicable) to my family members and further release and discharge the GROW for injury, loss or damage arising out of my or my family’s use of or presence upon the facilities, owned, leased or rented, of GROW, whether caused by the fault of myself, my family, GROW or other third parties. The GROW Foundation strongly recommends that each individual traveling purchase their own travel insurance policy.

3. INDEMNIFICATION. I agree to indemnify and defend GROW against all claims, causes of action, damages, judgement, costs or expenses, including attorney fees and other litigations costs, which may in any way arise from my or my family’s use of or presence upon the facilities or agent facilities of GROW.

4. APPLICABLE LAW. Any legal or equitable claim that may arise from participation in a CLJ shall be resolved under Colorado law.

5. NO DURESS. I agree and acknowledge that I am under no pressure or duress to sign this agreement and that I have been given a reasonable opportunity to review it before signing. I further agree and acknowledge that I am free to have my own legal counsel review this Agreement if I so desire. I further agree and acknowledge that GROW has offered to refund any fees I have paid, if I choose to not sign this Agreement.

6. ARM’S LENGTH AGREEMENT. This Agreement and each of its terms are the product of an arm’s length negotiation between the Parties. In the event any ambiguity is found to exist in the interpretation of this Agreement or an of its provisions, the Parties and each of them, explicitly reject the application of any legal or equitable rule of interpretation which would lead to a construction either “for” or “against” a particular party based upon their status as the drafter of a specific term, language or provision giving rise to such ambiguity.

7. ENFORCEABILITY. The invalidity or unenforceability of any provision of this Agreement, whether standing alone or as applied to a particular occurrence or circumstance, shall not affect the validity or enforceability of any other provision of this Agreement or of any other application of such provision, as the case may be, and such invalid or unenforceable provisions shall be deemed not to be a part of this Agreement.
